Plant-Based Heaven at the ‘In Goop Health’ Summit: My Catering Experience

In 2019, whilst I was working for Farmacy (classified by Condé Nast Traveler as one of the best vegan restaurants in London) as Senior Chef my team and I were appointed to be the main caterers for the highly regarded ‘In Goop Health summit’. As part of my role I was responsible for supervising the overall success of the collaboration.

The event and brand developed by Gwyneth Paltrow brings together wellness enthusiasts from all over the world. As their food supplier, it was our job to create a menu that reflected the summit’s values and showcased the best of vegan cuisine. Our menu featured a range of healthy and delicious dishes, including Korean Lettuce Wraps, Mexican Earth Bowls and Za’atar Crackers.

The Mexican Earth Bowls were made with locally source sustainable produce, topped with a Jalapeño dressing and crunchy organic blue corn tortillas (all bursting with flavor). The Korean Lettuce Wraps were a fusion of traditional Korean flavors and plant-based ingredients. We used crispy lettuce leaves to wrap a flavorful mixture of kimchi, egg noodles, marinated mushrooms and other vegetables, creating a dish that was both delicious and nutritiously balanced. Lastly the Za’atar Crackers were a delicious gluten free snack packed with bold flavours inspired by the middle east, made with a combination of spices, sesame seeds amongst other traditional ingredients.

As the supervisor for the event, I was responsible for ensuring that everything ran smoothly. This included overseeing the preparation of the food, managing the service, and making sure that all of our guests were satisfied. It was a challenging role, but one that I thoroughly enjoyed.

Being a part of the In Goop Health summit was a nourishing experience, and the exposure that my team and I received from this event was invaluable. Not only did I get to showcase my passion for healthy, plant-based cuisine, but I also had the opportunity to meet new customers and establish relationships with other businesses in the health and wellness industry.
